Having been kindly gifted a large leg of wild boar I was somewhat unsure of what to do with it! Fortunately I can google....often wonder how I ever survived without it!
I thought I would share my findings.
I boned the leg to make the piece of meat smaller and slow casseroled some of it. Marinated it for 3 days in a mixture of wine and apple vinegar. Cooked it as per a Beef Bourguignon recipe, slowly casseroled for 5 hours. The result was delicious tender meat, a little dry as pork would be.
Anyone else got any tips for the remainder? |
